Roast Chicken with Herb Butter

Roast chicken with herb butter is, in his opinion, an example of an excellent lunch, served with roasted vegetables.

50 g Butter, unsalted

1 piece Garlic, fresh

1 piece Lemon, fresh, without shell

Preheat the oven to 180 degrees Celsius. Rinse the chicken well under lukewarm water and dry it.

Add chopped parsley and/or thyme (or any other green herb) to the softened butter, along with some salt and pepper. Mix well so that the seasonings are evenly distributed.

Use your fingers to separate the skin from the meat of the chicken, creating a pocket where you will add the herb butter with your fingers. Take your time with this step and spread the butter evenly under the skin using your fingers and palm. This will significantly enhance the flavor and prevent the meat from drying out during roasting. Save some butter to spread over the chicken before roasting.

Peel the onion and cut it in half. Also, cut the garlic and lemon in half. Fill the cavity of the chicken with lemon, garlic, and onion. This will ensure the chicken cooks evenly inside. Close the opening of the chicken with kitchen twine or toothpicks. Place the prepared chicken in a roasting pan, spread the reserved herb butter and olive oil over the top, and season with salt.

Roast the chicken in the preheated oven for 1 hour and 20 minutes. For the last 10 minutes, increase the temperature to 200 degrees Celsius to allow the skin to become beautifully crispy.
