Roast chicken with rosemary and thyme is one of the simplest dishes that is very hard to mess up, and it will surely please everyone who tries it.

Ingredients

1.5 kg Meat, chicken, thighs

1.5 spoons Oil, olive

1.5 teaspoons Salt, table

1 teaspoon Lemon zest, fresh

0.5 teaspoons Spices, pepper, white

1 bouquet Rosemary, fresh

1 bouquet Thyme, fresh

4 dl Water

Preheat the oven to 180°C. Wash the chicken, dry it, and remove any excess fat. Prepare a baking dish with a rack. Pour water into the bottom of the dish.

In a small bowl, mix the grated lemon zest, salt, and pepper. Wash and shake off the rosemary and thyme sprigs. Rub the chicken with oil, then season it inside and out with the spice mixture. Place the herbs inside the chicken.

Place the chicken on the rack in the baking dish. Roast it in the preheated oven for 1 hour. Occasionally check the water level in the dish and add more if needed. After one hour, increase the temperature to 200°C. Roast the chicken for another 15 minutes, then remove it from the oven and let it rest for 15 minutes. Check the doneness with a thermometer inserted into the thigh. The internal temperature of the cooked meat should be 75°C. You can also check by making a deep cut into the thigh with a knife and inspecting the meat. The meat should not be pink, and no pink juices should run out.

Transfer the chicken to a serving platter. Remove the herbs from inside the chicken and place them around the chicken on the platter. Serve.

Advice
It is best to use an organic lemon, as its peel is not treated with pesticides. If you dont have an organic lemon, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
