Rinse the pheasant under running water and dry it with a paper towel. Preheat the oven to 200 degrees and grease the baking dish. Rub the meat with salt and pepper, cover it with bacon slices, and tie it up. Then place the pheasant in the preheated oven and roast for 50 minutes. During roasting, baste the meat several times with its own juices and brush it with butter using a cooking brush.
