Ingredients

1.3 kg Meat, pork, curry without bones

2 spoons Oil, olive

1 spoon Salt, table

Preheat the oven to 220 °C. Rinse the meat under running water and dry it thoroughly with a paper towel. Rub the skin with salt and make shallow cuts with a sharp knife. Grease a baking dish with oil and place it in the preheated oven for 5 minutes.

Remove the heated baking dish from the oven and carefully place the roast in it (skin side up). Return the dish to the oven and roast the meat for 20 minutes. After 20 minutes, reduce the oven temperature to 170 °C and continue roasting for another hour. During roasting, you can baste the meat a few times with the juices that have collected in the dish. If the roast seems too dry, you can sprinkle it with a little water. Then increase the temperature to 220 °C and roast for another 10 minutes to allow the meat to brown nicely.

Remove the baking dish from the oven, transfer the roast to a wooden board, and let it rest in a warm place for 5 minutes to cool slightly before slicing. Slice the roast into pieces, serve on plates, and offer it. The juices left in the baking dish can be poured into a bowl and served as a gravy.
