Preheat the oven to 230 degrees Celsius.

Crush caraway seeds in a mortar along with garlic, thyme, and two tablespoons of oil. Spread the paste over the meat, season with salt and pepper, and place it in the preheated oven for 10 minutes.

After 10 minutes, reduce the temperature to 180 degrees Celsius and roast the meat for another hour.

20 minutes before the end of roasting, add diced potatoes and halved radishes to the baking dish, which have been previously oiled and salted.

After roasting, remove the meat from the baking dish and let it rest. Arrange oiled and salted young onions in the dish and roast the vegetables for another 20 minutes.

Serve the roasted meat alongside the roasted vegetables.
