Roasted Beef Back with Mustard and Horseradish

100 g Horseradish, prepared

3 spoons Mustard

1 bouquet Parsley, fresh

1 kg Meat, beef, shoulder

pieces Salt, table

6 pieces Shallot

500 g Potatoes, white

2 spoons Oil, olive

Preheat the oven to 190 degrees Celsius. Place the deli horseradish on a clean kitchen towel and squeeze out the liquid. In a bowl, mix it with mustard seeds and chopped parsley.

Season the meat with salt and pepper, then coat it on all sides with the horseradish mixture.

Peel the potatoes and slice them into thin wedges. Peel the shallot and cut it in half. Place both in a baking dish, season with salt, drizzle with olive oil, and mix. Make a hole in the center and place the meat in it.

Bake for 40 minutes, then remove the meat from the baking dish. Place it on a cutting board to rest.

Mix the potatoes and shallot, and return the baking dish to the oven. Increase the temperature to 220 degrees Celsius and bake for another 20 minutes, allowing the vegetables to brown nicely.

Slice the meat into thin pieces. Serve with the roasted vegetable side and a salad.
