Roasted Carrot and Ginger Soup
Carrots have the highest content of beta-carotene among all vegetables, and are also rich in potassium, calcium, folic acid, and iron. Ginger is known as a very healthy food that warms the body, aids digestion, supports the immune system, and helps eliminate bacteria and viruses. 900 g Carrot, fresh

0.5 teaspoons Thyme, fresh

1.4 l Soup base, chicken, cube

Steps

Preheat the oven to 220 degrees Celsius, and line a baking tray with parchment paper. Clean the carrots (peel if desired), wash them, and cut them into 2 to 3 cm pieces. Place the chopped carrots along with unpeeled garlic cloves on the baking tray, drizzle with 2 tablespoons of olive oil, season with pepper and salt, and mix well. Spread the vegetables in a single layer on the tray and bake in the preheated oven for 30 minutes.

About 10 minutes before the end of baking, peel the onion and finely chop it. Peel the ginger and finely grate it. Heat the remaining oil in a pot. Add the onion, ginger, and spices, and sauté for about 5 minutes, stirring occasionally, until the onion softens.

Add the roasted carrot pieces and garlic cloves (removed from their skins) to the pot. Pour in the broth, cover the pot, and bring to a boil. Then reduce the heat so that the liquid is just simmering, and cook the soup for another 20 minutes.

Blend the soup smoothly with an immersion blender and season to taste with pepper and salt. Serve it in soup bowls or deep plates while it is still warm. Optionally, garnish with cayenne pepper, toasted seeds, and/or a dollop of sour cream (yogurt).
