Roasted Cauliflower with Olives and Cheese
Even if cauliflower might not be your favorite vegetable, it will surely delight you when combined with Parmesan and olives.

Ingredients

600 g Cauliflower, fresh

2 spoons Oil, olive

15 pieces Olives, black, in brine

2 pinch Spices, pepper, black

70 g Cheese, Parmesan, hard

Preheat the oven to 180 degrees Celsius. Place a pot with a larger amount of salted water on the stove. Clean the cauliflower, wash it, and separate it into individual florets. When the water boils, add the cauliflower pieces to the pot and cook them for about 5 to 7 minutes (just enough time to soften slightly but still remain firm).

While the cauliflower is cooking, slice the olives into rings and grate the Parmesan. Drain the cauliflower and transfer it to a deep baking dish that has been well-greased with butter. Drizzle it with olive oil and mix well to ensure the oil is evenly distributed. Then add the olives and half of the grated Parmesan. Season with pepper to taste. Mix well again and spread evenly in the baking dish. Sprinkle the remaining grated Parmesan on top. Bake in the preheated oven for 20 minutes (or until the cheese melts and turns golden brown on top).
