Roasted Cauliflower with Sesame Dressing
Cauliflower lovers will be delighted with this recipe for a vegetable snack that is especially popular in the Middle East. Instead of frying the cauliflower, we will bake it in the oven, while keeping the traditional dressing made from tahini, water, lemon juice, and garlic. The result is a very healthy and tasty snack that will surely brighten up many gatherings.

1 piece Cauliflower, fresh

2 spoons Oil, olive

60 ml Sesame butter, tahini

60 ml Water

Preheat the oven to 240 degrees Celsius. Clean the cauliflower, wash it, and cut it into florets about 4 cm in size, then dry them well with paper towels.

Line a low baking dish with parchment paper. Place the cauliflower pieces on it, season with 1/2 teaspoon of salt and 1/4 teaspoon of freshly ground pepper, and drizzle with olive oil. Gently toss the florets with your hands to ensure they are evenly seasoned, then arrange them in a single layer in the baking dish. Bake in the preheated oven for 20 to 25 minutes (until the pieces are nicely browned on top and around the edges). You can turn the pieces during baking to ensure they cook evenly on all sides.

While the cauliflower is baking, prepare the sesame dressing. Peel the garlic and chop it as finely as possible or grind it into a paste using a mortar and pestle. In a bowl, mix the tahini, water, and lemon juice until smooth. Add the garlic and season with pepper and salt to taste. Store the dressing in the refrigerator until ready to use.

Remove the roasted cauliflower from the oven and serve it on a large plate. Drizzle with the dressing and sprinkle with chopped parsley. The dressing can also be served separately in a small bowl. Serve the prepared snack immediately.
