Roasted Chicken and Potatoes in Tomato Sauce

2 spoons Tomato, concentrate

60 ml Tomato sauce, without salt

800 g Potatoes, white

Steps

Preheat the oven to 200 degrees Celsius. Season the chicken pieces on both sides with pepper and salt. Rub the spices well into the meat with your hands.

Heat a large pan well and grease it with olive oil. Add the seasoned chicken pieces and cook them for 3 minutes on each side, or until a golden-brown crust forms on the surface.

While the chicken is cooking, peel, clean, and wash the potatoes. Cut them into pieces. Peel the onion and chop it coarsely.

Remove the seared chicken pieces from the pan and keep them warm on a plate. Leave two tablespoons of fat in the pan and discard the rest. Add the onion and unpeeled garlic cloves and quickly sauté everything. Stir in the tomato paste and sauce, then add water. Season with salt and pepper to taste, and use a spatula to scrape the bottom of the pan to release all the caramelized bits. Then add the potatoes and seared chicken pieces to the sauce.

Wait for the sauce in the pan to come to a boil, then transfer everything to a baking dish and place it in the preheated oven for about 50 minutes. If you have a pan with an ovenproof handle, you don’t need a baking dish; you can finish cooking everything directly in the pan.

The dish is done when almost all the sauce has reduced in the baking dish, the potatoes are tender, and the chicken is fully cooked inside. Sprinkle the prepared dish with chopped parsley.
