Steps

Using a sharp knife, make shallow cuts on the skin of the duck breast to create a crisscross pattern. Let it rest to reach room temperature.

Cook the blackberries with a little sugar and salt. Add lemon juice and blend everything together. Mix with blended roasted pear, then strain through a fine sieve to obtain a smooth cream.

Roast the duck breast until the meat is still pink in the center. Season with pepper and salt.

In the same pan used for roasting the meat, melt the chocolate and add Chinese spices. Pour in a little stock base and simmer until the sauce thickens appropriately.

Slice the green apple thinly, remove the core, and drizzle with lemon juice. Pan-fry the apple slices in melted butter.

Marinate the fennel in citrus juice.

Slice the duck breast and arrange it on a plate along with the other components. Serve the prepared dish.
