Roasted Duck with Honey and Ginger

Ingredients

2 kg Game meat, Duck, meat and skin, fresh

3 spoons Honey

1 spoon Ginger, fresh
Steps

Use a small tube (straw) to blow air between the skin and the meat of the duck, so that the skin slightly lifts.

Place a smaller pot on the stove and fill it halfway with water. Place a slightly larger metal bowl on top, add honey, and heat it over the steam until it liquefies. Mix in grated ginger and remove the bowl from the heat.

Preheat the oven to 200 degrees Celsius. Season the duck with salt both inside and out, then coat it with the honey and ginger mixture. Place it on a rack set in a roasting pan, into which you have poured 2 tablespoons of water. Roast the duck for about an hour and a half, until the skin becomes golden brown and crispy. Turn it several times during roasting and baste it with the juices that collect in the pan.

Once the duck is roasted, cut it into smaller pieces, arrange them on plates, and serve with a suitable side dish.

Advice
Smaller roasted ducks can be served simply cut into quarters or even halves, while larger ducks can be cut similarly to other poultry.
