Ingredients
-
500 g Meat, veal, liver
-
2 piece Onion, raw
-
2 piece Apple, fresh
-
30 g Butter, unsalted
-
0.5 teaspoons Salt, table
-
2 pinch Spices, pepper, black
-
2 pinch Spices, mayonnaise, dried
-
1.5 dl Soup base, beef, cube
-
2 spoons Flour, Wheat, bread flour
-
4 spoon Oil, vegetable oil, canola
-
6 twig Thyme, raw
Steps
-
Thoroughly wash the liver, remove the skin, dry it, and cut it into 1 cm thick slices. Wash the apples, slice them into 0.5 cm thick pieces, and use a sharp thin knife to remove the core with seeds, creating rings. Peel the onion, wash it, halve it, and slice it thinly.
-
In a large pan, melt the butter, then sauté the onion for 4 minutes. Lightly salt the onion while sautéing to soften it faster. Remove the sautéed onion from the pan and keep it warm. Place the apple rings in the pan in a single layer and cook each side for 2 to 3 minutes. Keep the roasted apples warm.
-
Place a new pan on the stove and heat it, then add oil. Lightly season the liver slices. Once the oil is hot, place the liver slices in the pan and cook them on medium heat for 4 minutes on each side. While cooking, season the liver with marjoram, pepper, and salt. Once cooked, pour in the broth, stir, and wait for the liquid to boil. Add the onion and apples to heat everything evenly, then remove the pan from the heat.
-
Wash the parsley, shake it dry, and chop it. Arrange the liver slices on plates, top with the onion and apples, pour the sauce over, and sprinkle with fresh parsley. Serve with a side of your choice.
