Roasted Parsnip Soup
Parsnip is a tasty root vegetable that was once very popular but has somewhat fallen into obscurity today. Its time to restore its former glory and include it in our diet more often. One way to do this is definitely with this incredibly delicious soup.

Ingredients

750 g Parsnip, fresh

2 spoons Oil, olive

50 g Cheese, Parmesan, hard

50 g Butter, unsalted

100 g Shallot

1.3 l Soup base, chicken, cube

4 spoon Sour cream

2 pinch Salt, table

2 pinch Spices, pepper, white

4 slice Meat, pork, smoked bacon

Preheat the oven to 200 degrees Celsius. Place a pot with a larger amount of lightly salted water on the stove and bring it to a boil. Clean the parsnip, wash it, cut it in half lengthwise, and place it in the boiling water. Once the water boils again, cook the parsnip for another 3 minutes, then drain it.

Place the drained parsnip pieces in a deep baking dish. Drizzle them with a little olive oil and arrange them in a single layer in the dish (with the cut side facing up). Sprinkle some grated Parmesan over the parsnip, then place the dish in the preheated oven for 30 to 35 minutes.

Peel and finely chop the shallots. Melt butter in a pot and slowly sauté the chopped shallot until it softens. Cut the roasted parsnip into smaller pieces and add them to the pot. Pour in the broth and bring to a boil. Partially cover the pot and simmer the vegetables for 10 minutes.

Cut the bacon slices in half and fry them until crispy in a well-heated pan. Remove the fried bacon slices from the pan and place them on a plate lined with paper towels.

Blend the soup smoothly with an immersion blender. Stir in the sour cream and the remaining grated Parmesan into the hot soup. Season with pepper and salt to taste.

Serve the soup in deep bowls or soup cups, garnish with the crispy bacon slices, and enjoy.
