Steps

Wash the parsnip, peel it, and clean it. Cut it into 2 cm thick rings and add them to a large bowl. Wash the rosemary, thyme, and basil, shake them dry, pluck the leaves, and finely chop them. Add the chopped herbs, salt, pepper, and olive oil to the bowl with the parsnip. Mix everything well.

Preheat the oven to 230 °C, and line a large baking dish with parchment paper. Spread the seasoned parsnip evenly in the prepared baking dish and sprinkle with any remaining herbs from the bowl.

Place the baking dish in the preheated oven and roast the parsnip for 30 minutes. Stir it well at least twice during roasting and lightly sprinkle with water.

Serve the roasted parsnip as a side dish.
