1 kg Parsnip, fresh
-
4 spoon Oil, olive
-
4 spoon Honey

pieces Salt, table
Steps
-
Preheat the oven to 220 degrees Celsius. Clean the parsnip (peel or scrub if necessary), wash it, and cut it lengthwise into quarters.

Place the sliced parsnip in a baking dish. Season it with salt and freshly ground pepper, then drizzle with three tablespoons of olive oil. Gently toss to ensure the pieces are evenly coated, then arrange them in the baking dish and roast in the preheated oven for 30 minutes. Halfway through, turn the parsnip pieces to ensure even browning on both sides.

In a small bowl, mix the honey, mustard, and remaining oil until smooth. Pour the prepared glaze over the parsnip, gently toss to coat, then return to the oven and roast for an additional 10 minutes, until caramelized and golden brown.
