Roasted Pork Loin with Honey and Mustard

500 g Meat, pork, pork fish

1 piece Onion, raw

Preheat the oven to 200 degrees Celsius. Rinse the pork loin and thoroughly dry it with paper towels. Season it with salt and freshly ground pepper. Strip the leaves from the thyme sprigs, finely chop them, and mix them with mustard and honey.

Peel the onion, halve it, and slice it into pieces, then scatter them in a greased baking dish. Place the seasoned pork loin on top of the onion and spread half of the honey-mustard marinade over it. Cover the dish with aluminum foil and place it in the preheated oven for 25 minutes.

Carefully remove the aluminum foil and spread the remaining marinade over the pork loin. Turn on the broil function and roast the pork loin for an additional 5 minutes to create a crispy crust, while the internal temperature of the meat reaches 65 to 70 degrees Celsius.

Once the pork loin is roasted, remove it from the oven, place it on a cutting board, and let it rest for 10 minutes before slicing. Cut it into 1.5 cm thick slices and drizzle with a little of the juices that accumulated in the baking dish during roasting before serving.
