Roasted Pork Neck with Horseradish and Potatoes
If you enjoy potatoes and meat on Sundays, you will surely like this recipe. To make the meat even juicier and more flavorful, and the dish a bit more interesting and unique, prepare a marinade made of mayonnaise, mustard, horseradish, and garlic, which is spread over the meat before roasting.

600 g Meat, pork, neck

50 g Mayonnaise

1 spoon Mustard

2 spoons Horseradish, fresh

2 pod Garlic, fresh

800 g Potatoes, white

1 piece Carrot, fresh

40 ml Oil, vegetable oil, canola

2 piece Tomato, red

Rinse the meat under running water and dry it well with paper towels. Peel the garlic and crush it with a pinch or two of salt into a smooth paste, which is then mixed with mayonnaise, mustard, and grated horseradish. Optionally, add a bit of freshly ground pepper. Spread the prepared mixture on both sides of the dried meat pieces. Place them in a bowl, cover with plastic wrap, and store in the refrigerator for a few hours (preferably overnight).

Preheat the oven to 210 degrees Celsius. Clean the vegetables, wash them, and slice them (leave cherry tomatoes on the vine). Grease the baking dish well with oil.

Spread slices of one onion in a single layer on the bottom of the baking dish. Add the sliced carrots and potatoes, and lightly season the vegetables with pepper and salt. Add the marinated meat pieces and top them with slices of the remaining onion. Place the cherry tomato vines on top.

Pour 100 ml of water into the baking dish, then cover it with a lid or aluminum foil and place it in the preheated oven for 30 minutes. After half an hour, remove the cover (foil), reduce the temperature to 170 degrees Celsius, and bake the dish until all the ingredients are nicely browned and softened (approximately 20 to 30 minutes). Baste the ingredients several times during baking with the juices that have collected in the dish. Serve with a bowl of salad.
