Rinse the pork shoulder under running water and dry it with paper towels. Rub it well with salt and freshly ground pepper on all sides.

Place the seasoned pork shoulder in a roasting pan and roast it in a preheated oven at 180 degrees Celsius for 1.5 to 2 hours. During roasting, turn it several times and baste it with the juices that have collected in the pan. For the last 15 minutes of roasting, increase the temperature to 200 degrees Celsius to allow the crust to crisp up.

Remove the roasted meat from the pan, loosely cover it with aluminum foil, and let it rest for a few minutes so that the meat juices distribute evenly. Then slice the pork shoulder and serve it with your chosen side dish.
