Roasted Pork Tenderloin with Mustard

1 spoon Oil, vegetable oil, canola

900 g Meat, pork, pork fish

1 piece Onion, raw

2 spoons Mustard

2 spoons Vinegar, apple
Steps

Preheat the oven to 190 degrees Celsius. Rinse the pork tenderloin, pat it dry with paper towels, and tie it with kitchen twine. Season the meat on all sides with pepper and salt. Peel the onion, halve it, and slice it.

Place a large pan on the stove and heat it well. Pour oil into the hot pan and tilt it to spread the oil evenly. Place the seasoned meat in the pan and sear it on all sides until golden brown.

Move the seared meat to the side and add the sliced onion to the pan. Quickly stir the onion, then place the meat on top. Spread a mixture of mustard and apple cider vinegar over the top and sides of the meat. Place the pan in the preheated oven for about 35 minutes. The meat is done when the internal temperature reaches between 60 and 65 degrees Celsius.

Transfer the roasted meat to a cutting board and loosely cover it with aluminum foil. Let it rest for 10 minutes, then remove the kitchen twine and slice it into pieces. Serve with your chosen side dish.
