Peel the potatoes, clean them, and rinse thoroughly under running water. Cut them into 0.5 to 0.8 cm thick slices. Rinse the rosemary, oregano, and parsley under running water and dry well. Remove the leaves from the stems and finely chop them. In a small bowl, mix the chopped herbs, olive oil, salt, and pepper.

Place the potato slices in a pot and cover with cold water, ensuring the water is about two fingers above the potatoes. Salt the water and place the pot on the stove. Once it boils, reduce the heat slightly and cook the potatoes for another 3 to 4 minutes. Be careful not to overcook the slices, as they will fall apart.

Preheat the oven to 220 degrees Celsius and turn on the upper heat. Line a low baking dish with parchment paper. Drain the potato slices well and place them in the prepared baking dish. Spread them evenly. Use a brush to coat both sides with the herb and oil mixture. Place the dish in the preheated oven for 15 to 20 minutes, until the potato slices are nicely golden brown on top. Bake in the middle rack, and for the last 5 minutes of baking, you can move the dish to the upper rack.

Advice
The baking time depends on the thickness of the slices and the performance of the oven. The cooking time of the potatoes in water is also important. If the potatoes are well-cooked in water (so that the slices are almost falling apart), they only need to be baked in the oven for 10 minutes. Otherwise, they need to be baked longer. If you want the potatoes to be extra crispy, brush them with the oil in the baking dish 10 minutes before the end of baking. You can use any combination of dried or fresh herbs and spices (basil, garlic, chili, ground pepper, thyme, rosemary, etc.).
