Roasted Potatoes with Herbs and Parmesan
With the addition of fresh (or dried) herbs and grated cheese, we can transform ordinary roasted potatoes into a superb side dish that pairs excellently with boiled or roasted meat and baked fish. If served with various sauces, it creates a tasty snack that can spice up many gatherings.

1.25 spoons Wheat flour, white, multi-purpose

Preheat the oven to 200 degrees Celsius. Peel and wash the potatoes. Cut them into chunks, place them in a pot, and cover with enough cold water, adding salt. Bring the potatoes to a gentle boil and let them cook for exactly 2 minutes, then drain them. Return the drained potatoes to the pot, drizzle with one tablespoon of oil, and mix well to ensure the oil is evenly distributed.

Strip the leaves from the thyme and rosemary sprigs and finely chop them. Place the chopped herbs in a bowl and mix with flour, Parmesan, salt, and pepper. Add the potato chunks to the bowl and mix thoroughly with clean hands to ensure the seasonings and cheese are evenly distributed.

Pour three tablespoons of oil into a deep baking dish. Place the dish in the preheated oven for a few minutes to heat the oil well. Add the seasoned potato pieces to the hot oil. Shake the dish slightly to spread the potato pieces evenly, then bake for 40 minutes. Halfway through baking, carefully turn the potatoes to ensure they brown evenly on both sides.
