First, prepare the marinade. Thoroughly wash and dry the lemon. Grate about one teaspoon of zest, then cut it in half and squeeze the juice from both halves. Wash the rosemary thoroughly, shake it dry, and strip the leaves from the stems. Peel the garlic and press it through a garlic press (or finely chop it). In a small bowl, combine all the marinade ingredients and mix well.

Thoroughly wash the rabbit pieces and dry them with paper towels. Rub the rabbit meat with the prepared marinade, then place it in a larger bowl, cover with aluminum foil, and refrigerate for at least two hours.

Before roasting, place the marinated meat pieces in a colander and drain well, catching the excess marinade. Place a deep pan on the stove and heat it well, then add oil and heat it. Quickly sear the meat pieces on all sides in the hot oil.

Preheat the oven to 200 degrees Celsius. Prepare a larger baking dish and arrange the seared meat pieces in it, sprinkling them with juniper berries. Pour over the juice left from searing and the remaining marinade. Place the dish in the preheated oven for 50-60 minutes. Turn the meat pieces every 20 minutes.

Serve the roasted rabbit pieces on plates and offer with a suitable side dish.
