Roasted Salsify with Olives

Ingredients

500 g Turnip

80 g Olives, green, in brine

2 piece Bell pepper, red, fresh

3 spoons Oil, olive

2 pod Garlic, fresh

0.5 teaspoons Salt, table

1 pinch Spices, pepper, black

1 spoon Juice, lemon

2 twigs Rosemary, fresh
Steps

Clean and wash the salsify. Cut the roots into chunks. Wash the peppers and cut them in half lengthwise. Remove the stem and seeds, then slice them into strips. Peel and chop the garlic. Wash the rosemary sprigs and shake them dry.

Place the salsify chunks in a pot and add enough water to cover them. Lightly salt the water and place the pot on the stove. Once the water boils, reduce the heat and simmer for 10 minutes. Then, thoroughly drain the salsify.

Heat oil in a pan with a thick bottom and sauté the salsify chunks on all sides for 4 minutes. Add the peppers, stir, and cook for another 4 minutes.

Add the garlic, olives, lemon juice, and season with salt and pepper. Transfer the dish to a serving plate, garnish with rosemary, and serve.
