Roasted Sauerkraut with Ribs
An excellent meal made from everyday ingredients, which with a bit of effort and time can be transformed into a true winter specialty that pleasantly spices up the menu. Serve it with fried potatoes, dumplings, or mashed potatoes. If you dont feel like dealing with a side dish, it also pairs well with just bread.

Ingredients

800 g Meat, pork, ribs

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

pieces Garlic, fresh

800 g Sauerkraut

1 spoon Spices, paprika

2 piece Spices, bay (leaves)

Steps

Taste the sauerkraut. If it seems too sour, quickly rinse it under running water and drain well. Peel the garlic and onion, and chop them finely separately.

Season the pork ribs well with salt and pepper. Place a larger pan on the stove and heat two tablespoons of oil. Sear the seasoned ribs on all sides in the hot oil. Transfer the seared ribs to a plate.

In the same pan where the ribs were seared, add the onion and sauté until it becomes translucent and slightly soft. Add the garlic and quickly sauté until fragrant. Mix in the sauerkraut and sauté everything together for a bit longer. Finally, add the paprika and bay leaf, and season the sauerkraut to taste with ground pepper.

Grease a baking dish with oil or fat. Add the sauerkraut and spread it evenly over the entire surface. Arrange the seared ribs on top of the sauerkraut and pour over the juices that have collected from the meat. Add water or broth to the dish to prevent the sauerkraut from drying out during baking.

Cover the baking dish with aluminum foil and place it in the oven preheated to 180 degrees Celsius for about 50 minutes. Remove the foil, cut the ribs into smaller pieces if desired, and bake the dish in the preheated oven for another 20-30 minutes until the ribs and sauerkraut are nicely browned. Add a bit more water to the dish if needed.
