Ingredients
Baked cauliflower

Preheat the oven to 220 degrees Celsius. Clean the cauliflower, wash it, and separate it into individual florets. Cut large florets in half or quarters if necessary, while leaving small ones whole.

Place the cauliflower pieces in a bowl and season them with olive oil, curry, garlic powder, salt, and ground pepper. If desired, use ground chili instead of pepper. Mix well to ensure all pieces are evenly seasoned.

Line a large baking dish with parchment paper. Spread the cauliflower in a single layer across the entire surface. Place the dish in the preheated oven for 35-40 minutes.

While the cauliflower is roasting, prepare the yogurt sauce. Rinse parsley or mint under running water, shake off excess water, and chop finely. In a bowl, mix yogurt with lemon juice, chopped parsley/mint, garlic powder, and salt. Season the sauce with ground pepper if desired. Keep it refrigerated until ready to use.

When the cauliflower pieces are tender and slightly browned at the edges, remove the dish from the oven. Serve the roasted cauliflower on a plate. Optionally, drizzle it with the yogurt sauce or serve the sauce in a separate bowl alongside the cauliflower.
