Roasted Sweet Potatoes with Avocado, Feta, and Pomegranate
A healthy and delicious meal that you can enjoy for dinner without any reservations. If desired, omit the pomegranate and use chopped nuts instead. If you cant do without meat, you can also sprinkle crispy bacon pieces on top.

Preheat the oven to 200 degrees Celsius. Line a low baking dish with parchment paper.

Thoroughly wash the sweet potatoes under running water and scrub them if necessary to remove all dirt, then dry them well with paper towels. Pierce the skin of the potatoes in several places with a fork.

Cut the potatoes in half lengthwise. Coat all halves with oil, then season them well with pepper and salt. Place them on the baking dish (cut side down) and bake in the preheated oven for 30-35 minutes. To check if the potatoes are done, insert a narrow knife into the potato - if it pierces easily, it's ready.

While the sweet potatoes are baking, prepare the avocado. First, cut the fruit in half and remove the pit. Rinse the parsley under running water, shake it dry, and chop it finely. In a bowl, add the avocado flesh, which you remove from the skin using a spoon, then mash it with a fork. Add lemon juice, chopped parsley, and olive oil. Season to taste and mix well.

Arrange the roasted sweet potato halves on plates. Top them with the mashed avocado, crumbled or diced feta cheese, and pomegranate seeds. Serve the prepared dish.
