Roasted Sweet Potatoes with Herb Butter
Since we slice the sweet potatoes thinly before baking, with one side still holding them together, they open up like a fan during baking, making the dish look absolutely stunning. The herb butter, which melts between the slices during baking, adds flavor and an extra wow effect.

Steps

Preheat the oven to 200 degrees Celsius. If baking in a baking dish, line it with a piece of parchment paper.

Wash the sweet potatoes thoroughly under running water. Since we won't peel them, scrub them if necessary to remove all dirt. Dry the washed potatoes with paper towels.

Make several deep cuts into each potato with a sharp knife, ensuring they remain in one piece (the slices should be between 3 and 4 mm thick). This is easiest to do by placing two straws parallel to the potato and making deep cuts at 3 mm intervals. The straws help as a guide - when the knife touches them, stop cutting. Repeat the process to cut all the potatoes.

In a small bowl, melt the butter and mix it with lemon juice, salt, ground pepper, chopped thyme, and rosemary. Taste the herb butter and adjust the seasoning if needed.

Arrange the sliced potatoes in the baking dish (you can also use an ovenproof skillet), with the side where the potatoes are still connected facing down. Brush the tops of the potatoes with the herb butter, using a brush to help spread it. It's good if some butter gets between the slices. Place the dish in the preheated oven for 30 minutes.

After 30 minutes of baking, when the potatoes have softened slightly, remove the dish from the oven. Brush the potatoes with the remaining herb butter, trying to get it between the slices again. Bake the potatoes in the preheated oven for another 30 minutes. They are ready when they are soft inside and the slices are crispy on top.
