Thoroughly wash the sweet potatoes under running water and scrub them if necessary to remove all dirt. Dry them with paper towels and cut them into smaller pieces. Peel the onion and slice it into thicker pieces, peel the garlic and slice it into thin pieces.

Preheat the oven to 200 degrees Celsius. In a baking dish, first add the chopped sweet potatoes, garlic, and onion. Strip the thyme leaves from the sprigs and sprinkle them over the ingredients in the baking dish. Drizzle everything with olive oil and season with salt and ground pepper. Mix the ingredients well with clean hands so that the seasonings and oil are evenly distributed.

Place the baking dish in the preheated oven for 35-40 minutes, until the sweet potatoes are tender and golden brown. Stir the vegetables well halfway through the baking time.
