Roasted Veal Ribs
Properly roasted veal ribs are golden brown on the outside and a beautiful light pink color on the inside. To achieve this, we first sear them on both sides in a pan, then finish them off in a preheated oven for a few minutes.

800 g Meat, veal, ribs

0.5 teaspoons Salt, table

0.25 teaspoons Spices, pepper, black

30 g Butter, unsalted

Rinse the veal ribs under running water and dry them thoroughly with paper towels. Lightly season both sides with pepper and salt. Let the seasoned veal ribs sit at room temperature for a while to warm up.

Preheat the oven to 250 degrees Celsius. Place a pan on the stove and heat oil and butter until hot. Sear the veal ribs on both sides in the hot fat until golden brown. Transfer the seared ribs along with the pan to the preheated oven for about 10 to 15 minutes. Halfway through, flip the ribs to ensure even cooking on both sides.

Serve the roasted ribs on plates and offer them with a side dish of your choice.
