Ingredients
Dough
-
600 g Flour, Wheat, bread flour
-
0.5 piece Yeast, dry
-
2.5 dl Milk, whole milk
-
2 spoons Sugar, white
-
100 g Butter, unsalted
-
2 piece Egg, fresh
-
2 piece Egg, egg yolk, fresh
-
1 teaspoon Salt, table
-
1 spoon Oil, vegetable oil, canola
Filling
-
2 spoons Cheese, cottage cheese
-
1 piece Egg, egg yolk, fresh
-
1 pinch Salt, table
-
pieces Ham, pressed
-
pieces Butter, unsalted
Steps
-
Sift the flour into a bowl and make a well in the center. Crumble (or sprinkle) the yeast into the well. Heat the milk, sugar, and butter until lukewarm, then pour into the well with the yeast. Let it sit for a few minutes to activate the yeast and allow it to rise.
-
Add the remaining ingredients to the bowl and knead everything well. For this step, I prefer using a mixer with dough hooks (or a kitchen robot), as it is very important that the dough is well-kneaded. If the dough is too wet, add a bit more flour. Shape the kneaded dough into a loaf and let it rise in a warm place until it doubles in size.
-
Turn the risen dough onto a floured board and roll it out into a rectangle about half a centimeter thick.
-
Cut the rolled-out dough into triangles using a regular knife or a pizza cutter. Make a small cut in the middle of the base of each triangle, where you will start rolling.
-
Fill the triangles with a mixture of cottage cheese, salt, and egg yolk, then place a piece of ham or prosciutto on top. Roll the triangles from the wider end toward the narrower end to form rolls.
-
Place the rolls on a baking tray and brush the tops with melted butter (or place a small piece of butter on each roll). Let them rise for 20 minutes, then bake in a preheated oven at 180°C for about 25 minutes.
