Roman-style Gnocchi (Gnocchi alla Romana)
The next time you crave gnocchi but dont feel like making potato dough, try these light and creamy Roman-style gnocchi. Traditionally made from durum wheat semolina, which differs from regular wheat semolina in texture, color, and flavor. If you dont have it on hand, you can use regular semolina instead. The addition of grated Parmesan, butter, and egg yolks makes these gnocchi incredibly light, creamy, and so delicious that they might quickly become your favorite side dish.

Ingredients

6 cup Milk, whole milk

1 teaspoon Salt, table

1.5 cups Semolina

8 spoon Butter, unsalted

100 g Cheese, Parmesan, grated

3 pieces Egg, egg yolk, fresh

Pour the milk into a pot and slowly bring it to a boil over medium heat. Season with salt. Gradually stir in the semolina while continuously mixing. Reduce the heat to low and cook the semolina for 10 to 12 minutes, stirring constantly, until it absorbs all the milk and the mixture forms a ball that pulls away from the sides of the pot.

Remove the pot from the heat and first mix in four tablespoons of butter, then the grated cheese, and finally, once the mixture has cooled slightly, the egg yolks.

Spread the mixture to a thickness of 1.5 cm in a well-buttered baking dish (you can use a wet spatula or your hands to help). Smooth the top, cover with plastic wrap, and let it cool completely.

Using a round cutter (7 to 8 cm in diameter), cut circles from the set mixture and arrange them in a buttered baking dish. Melt the remaining four tablespoons of butter and pour it over the gnocchi in the dish. Grate some more Parmesan on top, then bake in a preheated oven at 200°C for 15 minutes until the cheese melts and turns golden brown.
