Romanian Meat Stew (Tochitura)
Tochitura is a traditional Romanian dish, originally from Moldova. It is a thick and hearty meat stew, similar to goulash, made with pork and smoked sausages. The dish is traditionally served with boiled polenta and a fried egg. It is a very filling and calorie-rich meal, but you can lighten it up by omitting the fried egg.

Ingredients

1 spoon Meat, pork, fat

500 g Meat, pork, neck

1 piece Onion, raw

300 g Carniolan sausage

3 pods Garlic, fresh

2 spoons Tomato, concentrate

2 piece Spices, bay (leaves)

1 spoon Spices, paprika

240 ml Alcohol, Wine, White

Steps

Cut the pork into bite-sized pieces. Peel and finely chop the onion and garlic separately.

In a large pot, melt the fat (or heat the oil) and fry the chopped meat in two batches. Once the meat is browned, remove it from the pot and set it aside on a plate.

Add the onion to the pot and season with 1/2 teaspoon of salt. Cook while stirring until the onion becomes translucent.

Return the fried meat to the pot along with any juices that have accumulated. Add 1/4 cup of water, cover, and simmer for 20 minutes until the meat is almost tender. Stir occasionally and add more water if needed.

Cut the sausages into 1 cm thick slices and add them to the pot along with the chopped garlic, tomato paste, and bay leaf. Stir in the paprika and pour in the wine. Cover the pot and cook for another 15 minutes. Season with salt and pepper to taste.

Serve the stew on plates. Accompany it with polenta and a fried egg. Optionally, sprinkle some crumbled feta cheese on top.
