Rosemary, Walnut, and Butter Baguette
The recipe for these baguettes is simple, but baking is recommended on days when you spend most of your time at home, as they require quite a bit of time to rise. At our place, they disappear even before we manage to cool them down.

Ingredients

0.5 kg Wheat flour, white, multi-purpose

15 g Salt, table

20 g Yeast, dry

3 dl Water

pieces Rosemary, fresh

pieces Walnuts

pieces Butter, unsalted

The evening before baking the baguettes, sift half of the flour and half of the salt into a bowl, and add half of the yeast, which we dissolve in 3 dcl of water. Mix the ingredients, the dough obtained at this stage is quite runny. Cover the bowl with foil and let the dough rise overnight.

After at least eight hours of rising, add the remaining flour (sift it onto the dough), the remaining salt, and the remaining yeast, which we dissolve in a tablespoon or two of water. Mix well (knead for at least 8 minutes) and let the dough rise for another good hour.

Transfer the risen dough to a floured surface and divide it into 3 approximately equal parts, which we roll out into rectangles. Sprinkle one with crushed fresh rosemary, another with caramelized, finely chopped walnuts, and the third with melted butter.

After adding the seasonings and butter, tightly roll up the baguettes (similar to a pancake or a roll) and let them rest for at least another half hour. Meanwhile, preheat the oven to 240 degrees Celsius. Before baking, make 3 or 4 slashes on one side of the baguettes with a sharp knife.

Place a baking dish with water at the bottom of the oven, and place another baking dish with parchment paper on the racks, on which we place all three baguettes. After about 20 minutes, turn off the oven, and brush the still warm baguettes with butter and marmalade.
