Roux Soup
A simple homemade soup that was once one of the most common dishes on Slovenian tables, but today it is usually prepared only when we have a cold or digestive problems. The soup has a beneficial effect on digestion, tightens the intestines, regulates bowel movements, and most importantly, it warms and strengthens us pleasantly.

Ingredients

1 spoon Butter, unsalted

2 spoons Wheat flour, white, multi-purpose

1 l Water

pieces Salt, table

pieces Egg, fresh

Steps

Melt butter or fat in a pot. After the fat has melted, sprinkle in flour and lightly toast it over low heat while stirring until it turns light to slightly brown. Be careful not to burn the flour!

Gradually add water while continuously stirring to dissolve all lumps. Season with salt to taste, optionally with cumin, and cook the soup for 5 minutes until it boils.

In a small bowl, whisk the eggs well and slowly cook them into the boiling soup while continuously stirring. Cook for another 1 to 2 minutes until the egg sets, then remove the pot from the heat, serve the soup in bowls or deep plates, and serve immediately. Optionally, sprinkle some chopped parsley and/or chives on the soup before serving.
