Russian Cottage Cheese Pancakes (Syrniki)

Ingredients

450 g Cheese, cottage cheese

2 piece Egg, fresh

1 spoon Sugar, white

1 bag Sugar, white

1 pinch Salt, table

100 g Wheat flour, white, multi-purpose

0.5 teaspoons Baking powder

4 spoon Oil, vegetable oil, canola

Steps

In a bowl, add cottage cheese, egg, 1.5 tablespoons of oil, regular and vanilla sugar, salt, baking powder, and flour. Quickly mix the ingredients with an electric mixer set to medium speed. The resulting mixture should be thick and sticky.

Pour about 2.5 tablespoons of oil into a larger pan. Let it heat slowly over medium heat, meanwhile shaping 14 thicker small round pancakes from the prepared mixture. Use your palms to shape them, lightly moistening them. The pancakes should not be large, as they expand during cooking.

When the oil is hot enough, add the pancakes to the pan and cook them until golden brown on both sides (1 - 2 minutes per side). Cook them in batches, placing the cooked ones on a plate lined with paper towels.

Serve the cooked pancakes on plates, dust with powdered sugar, and accompany with jam, sour cream, and/or fresh fruit.

Advice
