Ingredients

40 g Butter, unsalted

1 piece Egg, fresh

40 g chocolate, dark

60 g Wheat flour, white, multi-purpose

1 teaspoon Baking powder

1 spoon Milk, whole milk

50 g Butter, unsalted
Steps

Mix softened butter, sugar, and egg yolks until frothy. Add melted chocolate to the mixture and mix well until you get a brown-colored batter. Sift flour and baking powder into the mixture. Mix the ingredients on low speed until well combined, then add just enough milk to create a smooth batter that is slightly thick. Beat the egg whites into stiff peaks and gently fold them into the chocolate batter in two or three parts using a hand whisk.

Preheat the oven to 200-220 degrees Celsius. Line the bottom of a small round cake pan with a removable base with parchment paper, grease the sides with butter, and dust with flour (remove any excess flour). Pour the batter into the prepared pan and smooth it out with a spatula or the back of a spoon. Bake the sponge cake in the preheated oven for 15 to 20 minutes. Let the baked cake cool.

Once the cake has cooled, cut it in half and spread apricot marmalade on the outside and inside (between the two layers). Melt butter in a small bowl and add chocolate. Once the ingredients have melted, gently mix them until you get a smooth chocolate glaze. Let it sit for 2 to 3 minutes to cool slightly. Pour the chocolate glaze over the cake and let it cool completely to set.

Serve the prepared cake on a beautiful plate or platter. Accompany it with a dollop of whipped cream.
