Steps

First, make the salad dressing. In a kitchen blender, blend basil, olive oil, pine nuts, and garlic until smooth. The dressing should be quite thin, so add more oil if needed. Season the prepared dressing with pepper and salt to taste.

Clean and wash the vegetables and parsley. Grate the carrot and beetroot, and chop the spinach and parsley.

Assemble the salad in a clean jar. First, pour the dressing into the jar, then layer the following ingredients to the top: cooked barley, grated carrot, grated beetroot, spinach, parsley, and almonds. Seal the jar tightly.
