Salad with Duck Breast

Ingredients

400 g Meat, Duck, meat and skin, fresh

2 piece Figs, fresh

3 pieces Tomato, red

1 piece Endive salad, fresh

2 handfuls Spinach, raw

3 pinch Salt, table

1 pinch Spices, pepper, black

3 spoons Vinegar, balsamic

1 pod Garlic, fresh

1 pinch Sugar, white
Steps

Thoroughly wash the duck breasts and pat them dry with a paper towel. Score the skin of the duck breasts in a diamond pattern with a knife and season with salt and pepper. Place a pan on the stove and heat it well, then place the duck breasts skin-side down in the pan and cook for 15 minutes. Then flip them and cook for another 5 minutes on the other side. Transfer the cooked breasts to a wooden board.

Wash the figs and cut them into quarters. Separate the lettuce into individual leaves, wash them thoroughly, clean them, and tear them into smaller pieces by hand. Also wash the mixed salad and tomatoes. Slice the tomatoes into rings.

Peel the garlic and press it through a garlic press. Mix the vinegar with one tablespoon of the fat that has collected in the pan and season with salt, pepper, and sugar, then add the garlic. Mix the salad dressing well. Then slice the duck breasts diagonally into thin slices.

Arrange the prepared vegetables and fruit on salad plates, top with the sliced duck breast, and drizzle with the prepared dressing. Serve the prepared salad.
