Cut the salmon fillets into very thin slices and arrange them on four plates. Sprinkle a pinch of ground pepper over the fillets.

For the sauce, mix oil, vinegar, lemon juice, and white wine in a small bowl. Enhance the flavor with a pinch of salt. Pour the sauce over the salmon slices and sprinkle with whole peppercorns. Let it marinate for at least half an hour so the marinade soaks well into the salmon slices, then serve.

Advice
