Salmon in Caper Sauce

Ingredients

2 spoons Butter, unsalted

1 pod Garlic, fresh

120 ml Alcohol, Wine, White

120 ml Soup base, beef, cube

1 teaspoon Wheat flour, white, multi-purpose

4 spoon Carp, soaked

Steps

First, remove any excess fat and skin from the salmon fillets, then lightly salt and pepper them on both sides.

Peel the shallot and garlic, then finely chop them separately.

Heat a tablespoon of butter in a pan and sear the seasoned fillets on both sides (approximately 2-4 minutes per side, depending on the size and thickness). Remove the seared fillets from the pan and keep them covered on a plate.

Add the remaining butter to the pan and sauté the shallot and garlic in the fat. Pour in the wine and use a spatula to scrape the bottom of the pan to release all the caramelized bits that formed while searing the fillets. Let the wine simmer on medium heat for about 3 minutes.

Meanwhile, in a small bowl, mix the broth base and starch or flour until smooth. Slowly pour the mixture into the pan. Stir continuously to create a smooth sauce without lumps. Add the capers and lemon juice. Adjust the lemon juice to taste, ensuring the sauce is not too sour.

Add the lemon slices to the sauce and let it come to a gentle simmer. Stir and cook until the sauce thickens slightly (about 2 minutes).

Return the salmon fillets to the pan and place the lemon slices on top. Cook just long enough to heat the fillets through. At the very end, stir in the chopped parsley or dill.

Serve the fillets with the sauce on plates. Pair the dish with boiled potatoes or rice.
