Salmon in Creamy Garlic Sauce with Spinach and Tomatoes
Tuscan-style salmon is an excellent dish that will surely find its way onto your menu more than once. Especially if you enjoy fish dishes, garlic, and creamy sauces. The good news is that you only need one large pan to prepare it, and you can enjoy it with numerous side dishes; from polenta, mashed potatoes, and gnocchi, to buckwheat porridge, couscous, and quinoa.

Ingredients

2 spoons Oil, olive

600 g Fish, salmon

2 spoons Butter, unsalted

6 pods Garlic, fresh

200 g Tomato, red

250 ml Sweet cream

pieces Spices, pepper, red or cayenne

45 g Cheese, Parmesan, grated

150 g Spinach, raw
Steps

Rinse the salmon fillets under running water if necessary and dry them well with paper towels. Lightly season them with pepper and salt.

Peel the garlic and finely chop it. Wash and dry the spinach and cherry tomatoes. Cut larger tomatoes in half, while smaller ones can be left whole.

Place a large pan on the stove and heat it well. Grease the heated pan with olive oil, then place the seasoned salmon fillets in it. Without flipping, cook them until they are lightly browned on the bottom (2-3 minutes), then flip them and let them cook on the other side for another 2 minutes. Be careful not to overcook the fillets.

Carefully remove the cooked fillets from the pan and keep them warm on a plate. Leave 1 tablespoon of fat in the pan and pour out the rest. Add butter and wait for it to melt, then add the chopped garlic and sauté it for 1 minute, stirring constantly, until fragrant. Be careful not to burn the garlic.

Add the tomatoes to the pan and sauté them with the garlic for 1 minute, then pour in the cream. Use a spatula to scrape the bottom of the pan well to release all the caramelized bits that formed during cooking. Season the sauce with salt and ground pepper to taste, and if you like it spicy, you can also add a pinch or two of cayenne pepper. Let the sauce simmer slightly (2-4 minutes).

Stir the spinach and grated Parmesan into the sauce. Cook until the sauce thickens and the spinach wilts, then add the salmon fillets back into the pan. Cook everything together for another 1 to 2 minutes, then remove the pan from the heat.

Serve the prepared dish on plates and enjoy it with your chosen side dish.
