Ingredients

Wash the limes thoroughly under running water and dry them with a kitchen towel. Grate about 2 teaspoons of lime zest. Thoroughly wash the cilantro, dry it, and chop it finely. Cut the limes in half and squeeze the juice from all halves. Reserve two teaspoons of lime juice, and pour the remaining juice into a large bowl, where you mix it well with salt, pepper, and cilantro.

First, rinse the salmon fillets under running water, then dry them with paper towels. Cut them into approximately 2 cm pieces, which you then dip into the prepared marinade. Let them sit for about 10 minutes so the salmon pieces absorb the flavors well. Turn them once during this time to ensure both sides are seasoned.

Meanwhile, in a small bowl, mix the yogurt and sour cream. Wash the chili, remove the stem, and cut it lengthwise. Use the tip of the knife to remove the seeds, then finely chop the remaining chili and mix it with the lime juice and grated zest into the yogurt. Season the sauce with salt and pepper to taste.

Light the charcoal. Heat the grill grate well and grease it with oil. Drain the salmon pieces and skewer them onto wooden skewers. Season the skewers additionally with pepper and salt if desired. Grill the salmon skewers on high heat for about 3-4 minutes. Turn the skewers during grilling to ensure they cook evenly on all sides.

Serve the prepared skewers on a plate and offer them with the prepared sauce.
