Salmon with Avocado

Ingredients

4 pieces Fish, salmon

30 g Butter, unsalted

2 pinch Salt, table

150 ml Yogurt, plain, from skimmed milk

1 piece Avocado, fresh

1 piece Mango, fresh

1 piece Lime, fresh
Steps

Thoroughly wash the avocado and mango. Peel the mango, remove the pit, and cut it into small cubes. Halve the avocado and remove the pit. Then scoop out the flesh from the skin and cut it into small cubes. In a bowl, combine the avocado, mango, and plain yogurt, and mix well. Wash the lime. Grate the zest, cut the lime in half, and squeeze the juice, then add the zest and juice to the bowl. Mix everything well again and place it in the refrigerator until ready to use.

Rinse the fillets under running water and dry them. Use your fingertips to go over the meat and find any bones, which you can remove with tweezers. Season the fillets with pepper and salt. Melt butter in a pan and fry the salmon fillets in it. Cook them for 5 minutes on each side until nicely browned.

Arrange the avocado sauce on plates, place the salmon fillets on top, and serve.

Advice
It is best to use organic lime, the peel of which is not treated with pesticides. If organic lime is not available, immerse it in boiling water for a few minutes and wipe it well to remove the wax containing toxins.
