Salzburg Dumplings
Fluffy Salzburg dumplings are one of the most famous Austrian desserts. The original recipe comes from Salzburg, hence they are originally called Salzburger Nockerln, and locally they are simply referred to as Salzburg dumplings. The dumplings are very light and fluffy, melting in your mouth, and when dusted with powdered sugar, they are said to resemble the three snow-capped peaks of Salzburg: Mönchsberg, Kapuzinerberg, and Gaisberg.

Ingredients

5 pieces Egg, egg white, fresh

3 spoons Sugar, white

1 piece Sugar, white

3 pieces Egg, egg yolk, fresh

40 g Wheat flour, white, multi-purpose

60 g Marmalade, orange

50 ml Milk, whole milk

15 g Butter, salted

pieces Powdered sugar
Steps

Grease an oval baking dish well with butter. Spread marmalade or jam over the bottom and pour milk over it. Set the dish aside.

Preheat the oven to 200 degrees Celsius. Place the oven rack in the middle position.

In a bowl, add the egg whites and beat them into stiff peaks, gradually adding sugar. Once you have a firm and glossy meringue, gently fold in the egg yolks. Do this by mixing three tablespoons of the meringue with the yolks, then fold this mixture back into the remaining meringue. Finally, sift in the flour and fold it in gently with a spatula to retain as much air as possible in the egg whites.

Using a wide pastry spatula, scoop the egg mixture and transfer it to the baking dish. Repeat the process two more times so that you have three large dumplings in the dish. Try to shape the mixture as upright as possible to resemble the Salzburg hills.

Place the dish in the preheated oven for 10-12 minutes. The dumplings should be golden brown on the outside but still moist inside.

Once the dessert is baked, dust it with powdered sugar to create the image of snow-capped peaks. Serve the prepared dessert immediately.

Advice
The addition of jam or marmalade can also be omitted, and we can simply pour milk into the baking dish, adding a vanilla pod or vanilla sugar for flavor and aroma. There should be just enough milk to completely cover the bottom.
