Šamrole with Apple-Cottage Cheese Filling
Šamrole probably doesnt need a special introduction, as it was once one of the most popular homemade desserts. Of course, it is still prepared today, especially during major holidays or important family events such as anniversaries, weddings, birthdays, etc. Instead of a sweet meringue filling or vanilla cream, this time we used a juicy cottage cheese filling with apples.

Ingredients
Filling

250 g Cheese, cottage cheese

200 ml Sweet cream

60 g Powdered sugar

250 g Apple, fresh

pieces Juice, lemon

pieces Lemon zest, fresh

500 g Dough, puff

1 piece Egg, fresh

2 spoons Powdered sugar

1 teaspoon Spices, cinnamon, ground

Preheat the oven to 190 degrees Celsius, line a low baking sheet with parchment paper. Prepare the molds for šamrole (if necessary, wash and dry them thoroughly). Wash the apples, peel them, and remove the cores. Grate them coarsely into a bowl, drizzle with lemon juice, and mix. Place the grated apples in a fine-mesh sieve set over a bowl. Squeeze them well with your hands.

Roll out the puff pastry thinly on a floured surface into a rectangle, then cut it into strips about 3 cm wide. Beat an egg in a small bowl. Wrap each strip of puff pastry around a metal mold, brushing the outside with the beaten egg. Place the rolls on the baking sheet and bake in the preheated oven for 15 to 20 minutes, until golden brown. Carefully remove the baked rolls from the molds and let them cool.

In a bowl, mix the cottage cheese until smooth using an electric mixer. In another bowl, whip the cream and sugar until stiff. Gently and slowly fold the whipped cream into the cottage cheese, then mix in the well-squeezed apples and grated lemon zest. Transfer the cream to a piping bag.

Fill the cooled rolls with the prepared cream. Arrange them on a plate or platter and dust with powdered sugar mixed with cinnamon.
