Šarkelj with Chocolate Glaze
Šarkelj, reserved only for special occasions! We prepared it with chocolate, but you can experiment with different glazes to customize the flavor of this delightful treat.

Steps

Sort through the raisins, place them in a sieve, wash thoroughly, and drain. Place the almonds in a bowl, pour boiling water over them, and let them sit for a few minutes. Then drain the almonds, remove their skins, and roughly chop them. Crack the eggs and separate the yolks from the whites into two bowls.

In the bowl with the yolks, add the butter cut into pieces and powdered sugar. Mix all the ingredients with an electric mixer until frothy. Add the rum, lemon zest, almonds, and raisins. In another bowl, mix the flour, starch, and baking powder. Slowly mix in the milk, then gradually add this mixture spoon by spoon to the ingredients in the first bowl.

Preheat the oven to 175 degrees Celsius. Beat the egg whites with an electric mixer until stiff peaks form, then gently fold them into the base batter. The batter should be thick and fluid. Grease the Šarkelj mold well and dust it with flour. Pour the batter into the mold, then place it in the preheated oven for 60 minutes. Once baked, invert the Šarkelj onto a wire rack and let it cool.

Prepare the chocolate glaze according to the instructions on the packaging, then pour it over the cooled Šarkelj. Sprinkle the Šarkelj with chopped hazelnuts. Wait for the glaze to set, then cut the Šarkelj into slices, serve on plates, and enjoy.

Advice
For baking, we use a 2-liter Šarkelj mold. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, submerge the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins.
