Šarkelj with Sour Cream and Poppy Seeds
A low-carb pastry, as we use erythritol instead of sugar. The poppy seeds give it a special texture and appearance, and it can be prepared in just a few minutes.

Steps

Preheat the oven to 175 degrees Celsius. Grease the šarkelj baking dish with butter.

In a large bowl, place the butter, which has been brought to room temperature, and erythritol. Mix them well with an electric mixer, then add the eggs and mix again. Add the sour cream, lemon zest, and vanilla extract, and mix once more.

In another bowl, mix the almond flour, poppy seeds, baking powder, and salt. Combine the dry ingredients with the egg mixture.

Pour the mixture into the baking dish and bake for 40 minutes, then remove the dish from the oven, cover it with aluminum foil, and bake for another 20 minutes.

After baking, let the pastry cool in the dish for at least 15 minutes, then transfer it to a rack to cool completely.
