Sauerkraut and Bacon Roll
A soft and fluffy dough roll filled with sauerkraut, potatoes, onions, and bacon. The roll is good both warm and cold - serve it cold as a snack, or enjoy it warm with a bowl of salad for lunch.

Ingredients

500 g Dough, puff

2 piece Potatoes, white

1.5 spoons Butter, unsalted

1.5 spoons Oil, vegetable oil, canola

5 slice Meat, pork, smoked bacon

1 piece Onion, raw

1 piece Spices, bay (leaves)

2 cups Sauerkraut

1 piece Egg, egg yolk, fresh

Steps

Peel, wash, and cut the potatoes into pieces, then boil them in salted water. Drain the cooked potatoes, season with a little butter, freshly ground pepper, and mash them.

Peel and finely chop the onion, cut the bacon into pieces. Heat oil in a pan and fry the bacon, onion, and bay leaf. When the onion turns nicely brown, remove the pan from the heat. Pour off excess oil and remove the bay leaf. Add the mashed potatoes and drained sauerkraut to the pan. Mix well so that the ingredients are evenly distributed. Season with salt to taste.

Preheat the oven to 220 degrees Celsius, line a low baking dish with baking paper. Moisten the work surface and place a piece of thawed puff pastry on it. Roll it out into a rectangle, about 30 x 35 cm. Spread half of the filling over the dough, then roll it up from the longer side into a roll, carefully transferring it to the baking dish. Repeat the process with the second piece of dough.

Before baking, brush the rolls with beaten egg yolk and sprinkle with caraway seeds if desired. Bake in the preheated oven for about 20 minutes or until golden brown.

Advice
