Sauerkraut with Bacon

Ingredients

1 spoon Oil, vegetable oil, canola

100 g Meat, pork, smoked bacon

1 piece Onion, raw

700 g Sauerkraut

4 pieces Spices, pepper, black

2 dl Water

2 pinch Salt, table

Peel and finely chop the onion. Cut the bacon into thin slices, then dice into smaller cubes. Taste the sauerkraut. If it seems too sour, quickly rinse it in a colander under cold running water.

Heat oil in a pot, add the bacon, and quickly fry it while stirring. Then add the onion and sauté until translucent. Add the sauerkraut and juniper berries, and mix everything well. Pour in water.

Once the sauerkraut comes to a boil, reduce the heat, cover the pot, and simmer until the sauerkraut is completely tender. Taste the sauerkraut and season with salt and ground pepper to taste.

Advice
Instead of bacon, you can use pancetta or leftover prosciutto. If desired, you can also flavor the cooked sauerkraut with cracklings or fried pork rinds. While braising the sauerkraut, add a little water or white wine if needed.
